Coconut Almond Granola

Preheat oven to 275°F.

Coarsely chop almonds by hand with a knife or in a food processor. Place chopped almonds in a medium mixing bowl and add other dry ingredients. In a separate small bowl, combine liquid ingredients and then add to dry ingredients, stirring until well coated. Spread granola mixture over two cookie sheets and place in oven.

Bake for one hour, stirring occasionally, about every 10 minutes, to ensure even baking and prevent burning. Depending on your oven's even baking capabilities, it may be advisable at about 30 minutes to switch the trays between their respective levels in the oven, putting the tray that was on the higher level to the lower, and vice versa.

When granola is golden brown, remove from oven, allowing the granola to cool on the trays before stirring to enhance clumping for those glorious chunks of granola that everyone loves.

If desired, add raisins or chopped dates after granola is thoroughly cool or, better yet, add them directly to your bowl of granola right when you're ready to eat.
